Add in 3 large eggs, mixing each egg in one at a time on a medium high speed. I make this cake all the time, and it comes out perfectly. Ever!! Really anything with a good seal will work though. Good baking tin! If the frosting is too thick, add an extra Tbsp of heavy cream.
The baking soda and baking powder have different tsp measurements but have the same amount in grams ? I did use 9×2 in cake pans instead of 6 in but each layer cake out about 1/2 inch thick so I think I did something wrong and it’s not the pan substitution.
